佐藤先生雙臂打開,手掌端正的扶住吧台桌面,像一直以來那樣。

「很抱歉,但是我不可能讓孩子斷炊。」

在鄭重的表達歉意後,佐藤先生接著才表明身為一個異鄉男人的為難。高挺鼻樑下的陰影襯托出他的硬派。恩,兼顧禮貌與氣場,確實像是昭和26年(1951年)出生的佐藤先生會說的話阿。當時來阻撓生意的小混混聽到對方滿口的日本語,想必跟不黯日文的我有相同的哀戚:在外星語言面前,即使英文詞彙量再多,也不由自主的瞬間退化為小學二年級程度,武功全廢。哪裡吵得贏他。

両手を広げて、カウンターに手をつく姿が常の佐藤さん。

「悪いけど、我々は子供達に食事に準備しないとならないんだ。」 佐藤さんは、そんな言葉と共に、自分がかつて経験した外国人ならではの体験を披露してくれました。高い鼻とその下の影がもたらす彼の硬派な印象。それは、オーラに溢れ、礼儀正しい、昭和26年(1951年)生まれの佐藤さんらしい話でした。昔、佐藤さんのビジネスを邪魔をしに来たチンピラ達がいたのですが、その際、彼らは佐藤さんから全く意味が分からない日本語(冒頭の言葉)を浴びせられたのです。きっとその時の彼らは日本語ができない私と同じような気持ちになった事でしょう。

当時、台湾で外国人との会話と言えば英語が一般的だったのですが、例えいくら英語の単語をたくさん覚えていたとしても、未知の外国語である日本語の前では、まるで瞬時に小学二年生の子供にでもなったかのように何も言えなくなってしまい、チンピラたちも邪魔や喧嘩をするどころか何も出来ず終いだったようです。

1986年,藤家庭料理在歷經街區黑白組織的攻防戰下帥氣開張。而當時扶住吧台桌面的這雙手,一扶就是30年。

「應該是看起來太會打架了。」老闆娘崇拜的補充,笑眯了眼。

 

1986年、藤家庭料理は町中の白(警察)と黒(非社会的団体)の組織の攻防戦下で開店しました。その当時からカウンターについていた両手が、今までの30年間、変わらず藤を支え続けて来たのです。

「多分見た目がとても喧嘩の強そうな人に見えるから」と、奥様は微笑みながら仰いました。

黑底金字的「預約制」擋在門外,雖然跟友人約好了,我卻遲疑應不應該進去。

門不算輕。向內推,稍微有點阻力。
一個不苟言笑的光頭老爺子正雙臂打開,端正的扶住吧台桌面。

他看來跟我有相同的遲疑。我感覺自己的粗魯打擾了場所裡的空氣,他似乎也認為我不該出現在這裡。有的店家擁有熱鬧的空氣,有的擁有慵懶,這裡的,該怎麼說呢?不到八坪的長條形包廂,冰塊碰撞聲比交談音量稍微大聲點而已,緩緩流出的樂聲在玻璃酒櫃與酒櫃間溫柔的撞來來撞去,總之是出不去了。

私は友達と予約していたのですが、中へ入るべきかどうかをずっと躊躇していました。

軽くはないドアを少し内側へ押し込んでみました。 すると、厳しそうな表情の老人が両手を開いてカウンターに手をついた姿がありました。 その時の彼は私と同じように戸惑っているように映りました。私は自分の無礼がこの場所の雰囲気を壊してしまった気がしました。彼も私がこの場所に相応しくないと思っているようでした。

賑やかな雰囲気のお店があったり、ゆっくりできるお店がある中で、一体この場所をどのように説明すればいいのでしょう?

8坪に満たない細長い空間で、氷をクラッシュする音は会話する声より少し大きい感じ。ガラスのキャビネットの間からゆっくりと流れる音楽。とにかくもうそこから抜け出したくなくなる雰囲気。

吧台椅應有的靠背、踩腳一個沒少,擺明了是沒有在怕久坐的客人。幾杯梅酒下肚,很容易就鬆懈下來,坐得亂七八糟,我則在造訪的這天,在這種神秘的包覆感和密閉性裡喪失了時間向度,錢包見底、就連末班捷運的時間都錯過了(這時就十分慶幸計程車允許刷卡)。就像老闆娘推薦的菠菜蛋一樣,花朵形狀的蛋包裡,菠菜被鬆鬆的裹著,也其實舒服得不想離開的吧。


カウンターの椅子は背もたれ付き、足置きも欠かせない。
長い時間座っている事を心配しているお客様がいないのも明確。

何杯か梅酒を飲んだ私はすぐにリラックスして、少し酔いが回り、微睡んでいました。私はお店へ伺った当日、とても神秘的に包まれ、居心地の良いこの狭い空間の中で時間を忘れて、財布が空っぽになり、終電に間に合いませんでした。(こんな時にタクシーの支払いをクレジットカードで出来た事はラッキーでした。)まるで奥様がオススメしたほうれん草の卵料理のように、ほうれん草が花の形をした卵の中にふんわりと包まれているのと同じ心地で、とても気持良くて、お店の外へ出たくなかったんだと思います。

狹長的吧台裡,佐藤先生幫我把冰得發白的酒杯斟滿,緩步與老闆娘側身而過。

埔里出身的彭寶美女士,年輕時隨爸爸的出差短暫走訪日本東京,兩人在飯店裡一見鍾情,靦腆的佐藤桑用火柴盒留下地址,成為語言不通的倆人書信往來的發端。越洋的心意透過大海傳遞,時斷時續,緣分眼看即將隨著一千多個苦苦等待的暗夜深埋。三年倏地過去,寶美再度下榻同一間飯店,恰巧遇上佐藤桑在飯店工作的最後一天,慢燒的引線被命定的相遇重新點燃,燃起兩人相敬、相知、相愛的嚮往,花火燦爛。


細長いカウンターでは、冷えて白くなってるグラスに佐藤さんがお酒をいっぱい注いでくれ、その後ゆっくりと歩いて奥様とすれ違いました。

埔里出身の彭寶美さんは、若い頃、父親の出張と共に短期間東京を訪問しました。その時にホテルで二人は互いに一目惚れし恋に落ちました。人見知りの佐藤さんはマッチ箱に住所を書き残しました。それがきっかけで、言葉が通じない二人は文通を始めました。互いの気持ちは海を渡り届きましたが、それはとぎれとぎれだったので千の夜の月日の中で埋もれてしまいそうになっていました。

三年後。寶美は再び同じホテルを訪問した際、滞在最終日に偶然佐藤さんと再会し、かつての運命的な出会いからゆっくりと進行してきた二人の仲は再び勢い良く燃えて始めました。二人は互いに敬い合い、理解し合い、また愛し合い、その仲はまるで花火のように輝き出しました。

如今的藤,由佐藤先生記下客人的名字,在旅人風塵僕僕重返達之際,無需失禮的再次詢問來歷,就能熟練的在1200瓶寄酒裡辨識出專屬於他們的那支。老闆娘彭寶美則保持著千金的氣度、卻褪去了大小姐的嬌貴,打理貨款,洗淨每個盤子。

儘管彭寶美女士謙和的說管理寄酒的任務太艱難,歸先生管,佐藤先生的手記上,其實繪滿各個酒瓶主人活靈活現的頭像。只要是曾經開酒、寄酒的旅客,來訪的日期、頻率和喜好都被牢固的守護著了,令人安心得像是在異地擁有整間的私人候機室般。而老闆娘只要翻開先生漂亮的字跡,就算是偶爾獨自顧家的日子,也像隨身攜帶了老伴溫柔的叮嚀般心安。


今の藤は、佐藤さんがお客様の名前を書き留めています。
それは旅行者たちがこの店に戻って来てくれた時に、もう一度名前を尋ねる事なく、1200本のボトルの中から彼らがキープしたお酒を巧みに識別するためです。

奥様の彭寶美さんはお嬢様のような上品さを保ちつつも、わがままを言わず、お金の管理し、綺麗にお皿洗いしています。お酒のボトル管理は難し過ぎるので、ご主人が管理していると彭美寶さんは仰っていますが、佐藤さんの手帳にはボトル所有者の鮮やかな似顔絵がたくさん描かれていました。

更にそこには、ボトルをキープしてるお客様が訪ねた日付、来店頻度、お好みなどを全部しっかりと管理されていて、お客様にはまるでプライベートスペースを持っているかのような安心感を与えてくれるのでしょう。

また、たまに奥様はが一人で店番をする日があっても、ご主人が丁寧に記録している手帳を開けば、いつでもご主人が優しく注意してくれているようですものね。

條通裡逐街兜售的玫瑰總是幾天就枯萎了。而藤的溫柔,藏匿於佐藤先生的不苟言笑之下,不醒目,卻源遠流長的廝守了30年,像是約定好了般。在飯店相識的倆人,由旅人成為主人,在陌生的國度裡發根,為精疲力盡的旅人披上無盡溫柔。


條通の中の通りで売られてるバラは数日ですぐ枯れてしまいます。
しかしながら、この厳しそうな佐藤さんの表情に隠された藤の優しさは、目立ちこそしませんが、30年間変わらずずっと守り続けられています。

まるで約束していたかのようにホテルで出会った二人の旅人は、いつしか異国に根ざした店のマスターになり、疲れた旅行者に無限優しさと癒しを提供しています。

週四的晚上,東區小酒館裡的喧嘩讓人焦躁難耐,鞋子因雨濕透了,卻沒能止住一心想反方向奔向條通的渴望。這天晚上,來自於石桓島的大叔教會我,有一種日本人,在台灣,只去上好的壽司餐廳用餐,飯後則去壽司店老闆介紹的上好的酒吧,然後有風度的讓自己在醉倒之前買單回家。

想不上癮都難。藤就是這樣子やさしい (yasashii) 的存在啊。

木曜日の夜、東区のビストロは賑やか過ぎて、人々を時にイラつかせてしまいます。しかも雨のせいで靴が濡れてしまい、條通へ行きたくてたまらない気持ちを抑えられなくなります。今晩、石垣島から来たおじさんから、日本人は台湾では、高級なお寿司屋さんにしか行かないという事、そして食後はお寿司屋さんから紹介してもらった美味しいバーへ行き、そして酔っ払う前にエレガンスな態度で会計して帰ると教えてもらいました。

ハマらいないのが逆に難しい。
藤はそう言う優しい存在なのです。

西城帶路 通のこだわりポイント

1.宜月初帶著大把鈔票拜訪。藤絕對不只供應美酒,埔里來的老闆娘堅持使用來自埔里的礦泉水烹煮食材,包含炸雞與牛排。月初め、たくさんのお札を持って訪問するのがオススメです。藤は美味しいお酒を提供するだけではなく、埔里から来た奥様は埔里のミネラルウォーターを使用して唐揚げやステーキなどの料理を作ることに拘りを持っています。

2.廚房很小、吧台很擠、老闆很體貼,請性急者跟著老闆的 tempo 體貼回去。キッチンが狭く、カウンターはとても混んでますので、どうか優しくオーナーさんのテンポを合わせて、お帰りくだせいませ。

3.如果喝一杯的習慣包含把妹,你可能要失望了。這裡只有滿出來的日本男人。もし一杯飲んで、女の子をナンパする趣味がある方なら、がっかりさせてしまうかもしれません。ここにはあくまでも日本人の男性しかいません。

[Please make reservation in Japanese] 藤: I would love to be a fortress for outlanders

 

Mr. Sato spread his arms and put his hands at the edge of the counter as he always does.

“I am sorry, but it is impossible for me to let my children suffer from starving.”

After expressing his sincere apology, Mr. Sato talked about his dilemma as a foreigner here in Taiwan. The light shed shadows on his high bridge of the nose, which outlined his toughness. Yes, he was a man that shows politeness and dignity. It was what Mr. Sato, a man that was born in Showa period (1951) would say. When street thugs came to disturb the business but encountered someone that speaks Japanese, they might have the same frustration feeling as me, who knows little Japanese. All the English vocabularies were useless. While trying to communicate in a foreign language, one’s vocabulary would degenerate back to second grade level. There was no chance to win the fight.

藤 Restaurant & Bar was opened in 1986, after surviving from the fight with both the police and the triads. The hands that hold on the edge of the counter have been insisting for three decades.

“It is possibly that he looks like someone who is good at fighting,” said Mrs. Sato with admiration and smiling eyes.

The golden character with black background has written, “Reservation only.” Though the reservation has been made with my friends, I still hesitated whether I could enter or not.

The door was a bit heavy and need to push harder.
The serious bald man was standing there, with his arms open and hands on the edge of the counter.

He seemed to share the same confusion as me. I felt that I disturb the space and he thought the same. Some restaurant has rejoicing atmosphere and some are cozy. But here? How could I describe with the right words? The long rectangle room was less than eight pings. The clanging sound of the ice cube was slightly louder than the talking. The music was floating between the wine cabinets. Anyway, you were trapped and could not escape, and you did not want to.

The bar stool had seatback and footrest. It was apparent that it welcomes guests to sit as long as he wants. After having some drinks, it ass easy to feel relax and sit whatever you feel comfortable. On the day I visited, I was totally lost in the time and space. My wallet was empty and I even missed the last MRT (fortunately that the taxi accepts credit card.) Just like the spinach omelet that Mrs. Sato recommended, the flower shape in the egg and the spinach is softly covered by the egg. It was too comfortable to leave.

Behind the long counter, Mr. Sato helped me to pour in more wine and gently passed through Mrs. Sato.

Mrs. Sato, Peng Bao-Mei, was born in Puli. She went to Tokyo with her father’s business trip while she was young. She met Mr. Sato and both of them fell in love at the first sight. Mr. Sato shyly gave her his address written on the matchbox, which started the corresponding even though there were language barriers. Their feelings were delivered cross the ocean. Sometimes it went on and sometimes it stopped. Their fate seemed to an end after more than 1,000 days. Three years later, Mrs. Sato, then Peng Bao-Mei, stayed in the same hotel in Tokyo again. That day was Mr. Sato’s last day working in the hotel. Their destiny was connected and their love came back again. They had learned to understand, cherish, and love each other. They have a beautiful love.

Mr. Sato would write down the name of the guest. When the traveler arrived after a long trip, he would not need to ask any information, but knew which wine among the 1200 bottles was saved for them. Mrs. Sato stayed the elegance as a noble princess, but she was not spoiled. She checked the stock and cleaned dishes. Mrs. Sato said humbly that the task of keeping the wine for guests was too challenging so it was better for Mr. Sato to be in charge. In Mr. Sato’s notebook, there were all the vivid illustrated avatars of the wine owner. The guest that had opened a bottle of wine and save the wine there, the date, the visiting frequency and the preference were all recorded and guarded. It was as if you have a private terminal lounge in the foreign country. And for Mrs. Sato, when Mr. Sato was away, she just needed to open the notebook and read the notes; she would feel Mr. Sato’s warm reminders.

The roses sold in Tiaotong fade easily. But the tender of 藤 was hidden under Mr. Sato’s serious face. It was not obvious but has been there for 30 years. It was like a promise. The two travelers that met in the hotel became the hosts, and developed their roots in a foreign country, welcoming the outlanders with endless warm and tenderness.

On Thursday night, the noisy in bars in the east district made one agitated. The shoes were soaked by rain but it did not stop one’s determination to rush to Tiaotong in the opposite direction. The night, the gentleman from Ishigaki Island taught me that there was a kind of Japanese man in Taiwan that goes only to the Sushi restaurant and then to the decent bar recommended by the sushi owner, and pay the bill and go home before he got drunk.

It is difficult to resist the addiction. 藤 is such a yasashii (tenderness) existence.

Suggestions

1. It is suitable for one to bring cash at the beginning of the month. 藤 provides not just good wines, Mrs. Sato also insists in using the water from Puli, her hometown, to cook cuisines, including fried chicken and steak.

2. The kitchen is small and the counter is crowded. Please be thoughtful by following Mr. Sato’s tempo.

3. If you are expecting to hit on some girls while having a drink, you will be disappointed because there are many and only Japanese men.
